How to make chicken broth for a sick child. Chicken broth for a patient, how to properly prepare a delicious medicine

Experience shows that rationally organized nutrition can be a significant help in the fight against certain diseases. Take, for example, chicken broth - this dietary, light dish will be very useful during the recovery period after illness, because it contains valuable substances that are beneficial to the body.

We can confidently say that the right chicken broth for a patient will be not only food, but also medicine.

Making chicken broth

The easiest way to prepare broth is from a whole chicken, and to make it richer, more aromatic and appetizing, it is best to cut the bird into several pieces. Usually it is cut into four parts. The meat, prepared and thoroughly washed under running water, is placed in a clean pan and filled with cold water so that it covers the chicken pieces on top by a couple of centimeters.

As soon as the water in the pan boils, reduce the heat and carefully remove with a spoon all the foam that has formed on the surface of the water. The easiest way to do this is with a slotted spoon. The foam must be promptly and completely removed throughout the cooking time, otherwise the broth will lose its transparency.

After there is very little foam, put a large peeled onion, parsley root and carrots cut into large pieces into the pan. After twenty minutes of cooking the vegetables, you can add spices to the broth to taste. You can use allspice or black pepper, rosemary or bay leaf, saffron or cloves. It is important to make sure that there are not too many of them, otherwise the seasonings will simply interrupt the taste and unique aroma of the chicken broth.

After you add all the necessary vegetables and spices to the pan, all you have to do is add salt to the water and simmer the dish for another forty minutes. The finished chicken broth turns out to be transparent and rich, and beautiful circles of chicken fat, which has a pleasant amber-yellow color, float on its surface. The broth can be served either as a separate dish or used as a base for other dishes.

When serving, place a piece of boiled chicken meat, half a boiled chicken egg, and finely chopped parsley or dill into each plate. You can also put sour cream on the table, which will harmoniously complement the taste of the aromatic and rich broth.

In the postoperative period, the patient is often prescribed a diet of pure chicken broth. And there are good reasons for this: recovery from serious illnesses and operations requires maximum concentration of vital forces from the body, and, therefore, a special approach to nutrition.

The healing properties of chicken broth are widely known in the medical community. Experts believe that it is ideal for restoring the body, weakened by both severe operations and common colds.

There are some rules for preparing broth for a sick person, which allow you to preserve the nutrients in the broth as much as possible and avoid side effects.

Making the right soups

The diet of patients with gastrointestinal diseases consists of easily digestible and low-fat foods. Gastroenterologists advise not to use bones, skins and too fatty meat - pork - for broth. People with gastritis are also not recommended to use salt, pepper and other spices.

Healthy soups for gastritis are prepared based on the main rules:

  • All vegetables and other components of a liquid dish must be pureed or finely chopped.
  • Butter is too fatty for a sick epigastrium, so, if possible, you need to replace it with vegetable oil.
  • It is not recommended to add hot spices, smoked meats and mushrooms to dishes.
  • For lovers of rich thick soups, whipped egg whites or fried flour are added to the dish.
  • Soups with cabbage, broccoli, pumpkin and zucchini are especially healthy.

Cooking depending on the acidity level

To prepare the right dietary dish, you need to know your level of gastric juice secretion.

It is recommended to include stewed and boiled vegetables, chicken, and beef in soup recipes for gastritis with high acidity. The ingredients are ground to a puree.

First courses for gastritis with a high acidity level should include:

  • vegetables - beets, cabbage, carrots, potatoes, zucchini, pumpkin;
  • meat - lean beef, chicken or turkey;
  • cereals - vermicelli, rice and buckwheat.

Sour cream or egg yolk is suitable for dressing. If you have a stomach ailment, doctors prohibit eating pickle soup, cabbage soup and rich broths.

If you suffer from a disease with low acidity, then the right dietary soup for gastritis should stimulate the production of hydrochloric acid. During this period, it is recommended to prepare rich fish and meat broth. Foods that cause fermentation - cabbage, legumes, garlic - should be completely excluded from the diet.

Indications and benefits

Chicken broth is a dietary product, easily digestible, without causing heaviness in the stomach. Contains amino acids and B vitamins vital for the body, as well as A, C, E. The broth contains useful trace elements of magnesium, potassium, phosphorus and iron, which help restore intestinal microflora, normalize metabolism, and help strengthen the central nervous system.

The high protein content provides energy to all systems of the body, helping to gain strength after a debilitating illness.

Peptides and proteins, which chicken meat is rich in, support the activity of the cardiovascular system, actively affect the muscle tissue of the heart and the walls of blood vessels, and improve blood supply to organs.

One of the most important advantages of poultry broth is its ease for the digestive tract, as well as stimulation of the secretion of gastric juice. Very often, seriously ill patients experience a lack of appetite and, against this background, even greater weakening after illness. Chicken broth is exactly the kind of food, a couple of spoons of which will bring significant benefits to the body, awaken the appetite and restore strength.

Chicken broth is useful for many diseases, but is especially indicated for some of them.

  • In case of poisoning. Varying degrees of toxic poisoning are usually accompanied by vomiting and diarrhea, resulting in severe dehydration of the body. In this case, the patient is contraindicated in eating heavy foods, which the weakened intestines will not be able to cope with. A gentle chicken breast broth comes to the rescue - you need to prepare lean meat containing many nutrients.
  • After operations on the intestines or with a perforated ulcer, the body requires liquid food that does not subject the intestines to additional stress. In this case, poultry broth constitutes the main diet of the patient, carefully nourishing the body with vitamins and without irritating the walls of the gastrointestinal tract.
  • Colds, operations of any kind, such as the removal of appendicitis, knock the body out of normal functioning and take a lot of energy. The amino acids contained in chicken broth help restore strength, normalize intestinal microflora, and help restore acidity.
  • The restorative effect of chicken broth is to increase immunity. Nutrients enable the body to better resist all kinds of infections. The risk of inflammatory processes in the postoperative period is significantly reduced due to the dietary properties of the decoction.

The effect of broth in case of intoxication of the body

In case of poisoning, the digestion process is disrupted, toxins from the intestines enter the blood, digestive enzymes are not released, and the body spends all its energy fighting harmful substances. Food that enters the body during this period complicates the process of cleansing the intestines; its digestion takes a lot of energy necessary for recovery. Therefore, doctors advise not to eat anything and drink plenty of fluids, this helps to avoid dehydration and not burden the body. But immediately after the symptoms of intoxication disappear, you can prepare a light soup for poisoning - chicken or vegetable.

Medicinal chicken broth is a dietary soup with a minimum of ingredients, without fat and seasonings. Why is it useful for poisoning?

  1. Nutritious, but not difficult to digest and assimilate food - a weak meat infusion - contains many useful substances, while its calorie content does not exceed 50 kcal per 100 g of product. It does not need to be digested and is easily absorbed by the body, the load on the stomach and intestines is minimal.
  2. Contains many useful substances - it contains amino acids, fatty acids, vitamins A, E, D, group B, micro and macroelements: potassium, sodium, magnesium, phosphorus, iron. After poisoning, a deficiency of these substances occurs in the body, and such nutrition helps to replenish it.
  3. Does not injure the inflamed mucous membranes of the digestive tract - the walls of the stomach and intestines are inflamed, they are easily injured by rough food, causing a sharp deterioration in the condition. Warm and liquid broth saturates the body, enveloping the mucous membrane and accelerating regeneration.

Chicken broth will also be useful for a child who is poisoned, but when consuming it, it is important to follow several rules:

  • Give broth only after all symptoms of intoxication have disappeared;
  • In case of poisoning, chicken soup is given to children over 1.5 - 2 years old and after consultation with a pediatrician;
  • The amount of soup should correspond to the age and needs of the child - there is no need to force the patient to eat more than he wants, or to severely limit food intake.

Harmful factors

Despite the beneficial properties that poultry meat broth has, if chosen and prepared incorrectly, it can cause significant harm to a weakened body.

The recipe for preparing broth for seriously ill patients or in the first days after surgery should exclude salt and vegetables. For all convalescents, spices and any ingredients that can irritate the gastric mucosa are excluded.

In case of alcohol poisoning, broth is indicated only after intoxication has been removed, that is, to restore strength. Rinse the body of toxins and restore the water-salt balance only with clean boiled water.

Factory-bred chickens are chemically stimulated to promote rapid growth, as well as given antibiotic injections to prevent disease. In this case, all chemical components will end up in the broth if you cook the meat in the usual way.

That’s why it’s so important to make the right dish that can be taken to the hospital for a recovering loved one.

Dishes for gastritis with high acidity

Gastroenterologists recommend preparing dishes from foods that are easy to digest and do not injure the diseased mucous membrane.

For example, vegetable soup for gastritis will enrich the body with useful microelements and give strength for recovery. The mucous dish has a gentle effect on the epigastric membrane, and chicken broth normalizes the acid level.

Pea soup

Experts recommend pea soup for gastritis with high acidity and during remission.

Prepare the dish according to this recipe:

  • 1 l. low-fat meat broth;
  • 200 g peas;
  • 1 medium carrot and onion;
  • 3 potatoes.

Preparation of pea soup for gastritis and stomach ulcers:

  1. Soak the peas in water for a couple of hours and boil.
  2. Grate the carrots, cut the onion into half rings, and separate into feathers.
  3. Peel the potatoes, cut into small cubes.
  4. Add all ingredients to the broth and simmer until tender for 20 minutes.
  5. Strain the resulting soup through a sieve.

Serve the dish with low-fat sour cream or a small piece of rye bread.

Chicken bouillon

Chicken soup is very useful for people with peptic ulcers and gastritis, because it does not irritate the lining of the stomach and activates the healing process.

  • 1 chicken leg;
  • 1 medium carrot;
  • 4 potatoes.
  1. Peel the leg from the oily skin, rinse and boil.
  2. Cut the peeled carrots into small circles or cubes.
  3. Remove the skins from the potatoes and cut into small pieces.
  4. Combine all ingredients in boiling broth and cook until tender.
  5. Crush the ingredients with a masher directly in the pan and add the greens to the broth.

How to choose meat?

The main ingredient of the broth - chicken - must be selected with special care and attention. Parts of the carcass that are intended for boiling are also important. So, for the dietary broth itself, you should choose the breast and wings, and for a more rich one, those parts that have more bones and dark meat.

It is preferable to take a young chicken or bird from a village farmstead from familiar farmers, but this is not always possible.

As a rule, chicken carcass and its parts are bought in supermarkets or markets. In this case, you need to follow a few simple rules.

  • Refuse to purchase meat products in unfamiliar places and spontaneous markets. If the purchase is made in a store, then you need to look at the packaging, check the date of manufacture, expiration date and manufacturer.
  • Do not buy frozen meat. Firstly, this is an unnecessary overpayment of money for ice. And secondly, the meat may be old and not from the first frost. A frozen carcass cannot be checked by touch or smell.
  • The skin of the chilled chicken should be free of defects and have a pleasant pinkish color. In older hens, the skin color in some places becomes yellow. There's nothing wrong with that, but it will take longer to cook.
  • When pressing on the carcass, there should be no dents left - fresh meat instantly takes on its original shape. If a dent remains, it means the meat was previously frozen.
  • And most importantly, the meat should not emit unpleasant odors. A chilled fresh carcass has a subtle smell of meat, without causing any unpleasant sensations.

How to cook?

The main rule of cooking chicken broth for a person who has suffered from an illness is that the broth should not be fatty. To do this, fat and skin must be removed from the chicken carcass, and for people with gastrointestinal problems, only chicken breast and, as a last resort, wings are taken.

In the first days, the convalescent is given lightly salted broth without vegetables. For patients who have undergone abdominal surgery, it is very important to prepare a second boil broth. To do this, you need to let the chicken simmer for 10 minutes, then drain the first broth and refill the pan with clean cold water. During cooking, be sure to skim off the foam and keep the pan over medium-low heat to avoid excessive bubbling. This will make the broth clean and clear.

Proper preparation of healthy broth for a patient involves several steps.

  • Wash the chicken thoroughly and gut it. Remove entrails, skin and subcutaneous fat. For a rich broth, boil a whole chicken or its individual parts. In this case, the breast can be left for the following days, when the convalescent diet allows you to take ground white meat.
  • The pieces are placed in a pan and filled with clean cold water so that the meat is covered by a few centimeters. Bring to a boil over high heat and cook for 10 minutes, then drain the first broth, add a new portion of water and bring to a boil again. After boiling, cook over low heat for one and a half to two hours.
  • During the cooking process, the foam is removed, and the finished broth is filtered through cheesecloth or a sieve.

Recommended first courses

The listed soups are allowed for diseases of the digestive system.

  • Puree soup for gastritis is recommended. The delicate consistency envelops the stomach and soothes inflammation. No excess energy is wasted on breaking down pieces.
  • Chicken soup. Normalizes the acidity of gastric secretion. Soup is acceptable during a relapse. The skin is removed from the meat. To keep the broth low-fat, it is better to cook it with white meat. Chicken can be replaced with turkey. If desired, add noodles or dumplings, carrots, and herbs to the chicken soup. A dish is served with a boiled egg and crackers.
  • Meatball soup is good for gastritis. Meat in this form does not injure the walls of the stomach and is quickly digested. It is advisable to boil the meatballs separately or steam them, then add them to the prepared vegetable soup.
  • Milk soup. It is not recommended to consume milk in its pure form for gastritis. But milk soup is allowed for gastritis without exacerbation. Low-fat milk is used; it is recommended to dilute the soup with water during cooking. You can add vegetables, dumplings and cereals to this soup.

Classic healing recipe

As noted above, the composition of the ingredients for the medicinal broth will depend on the prescribed diet or on the patient’s recovery period. This recipe contains a standard set of products that are included on the third or fourth day after surgery or poisoning.

In addition to chicken or young laying hen meat, you will need:

  • medium sized carrots;
  • bulb;
  • black peppercorns;
  • Bay leaf;
  • parsley root (optional)

The carcass is washed well under running water, skin and subcutaneous fat are removed. Cut off the legs - they will give too much fat, and the wings - they will not be needed for the medicinal broth, since they contain little meat and a lot of skin.

The remaining part of the carcass with chicken breast will make a diet broth of medium richness.

Place the meat in a pan with cold water, after boiling, cook for 5-10 minutes and drain the first fat.

After refilling the water, add the prepared ingredients to the pan and bring to a boil. As soon as the water boils, the fire is reduced to a barely noticeable bubbling. The second round of cooking takes from 45 minutes to 1.5 hours, depending on the softness of the meat. During cooking, stir the liquid and skim off the foam. 10 minutes before the broth is ready, you can lightly salt it.

After cooking, the vegetables and meat are removed and the broth is filtered. The finished broth is decorated with chopped young dill and a slice of boiled egg. You can put several slices of boiled carrots on a plate, after cutting them into beautiful half rings.

Chicken broth is the best dish for any disease. What makes it so useful? What healing properties does it have, how to prepare it correctly, and why doctors recommend chicken broth for poisoning.

Instructions for cooking classic broth

If you managed to purchase organic chicken, do not drain the broth after the first boil - cook in one water, getting rid of any foam from time to time.

Ingredients:

  • Chicken meat (gutted carcass) – 700-900 g
  • Carrots – 1 pc.
  • Onion – 1 pc.
  • Black pepper – 2 peas
  • Dill – 2 sprigs

Preparation:

  1. Wash the chicken in running water.
  2. Place the meat in a thick-walled pan (3 l).
  3. Fill with cold water.
  4. Turn on the fire to maximum.
  5. Bring to a boil and foam.
  6. Pour the first broth into the sink.
  7. Fill the pan with cold water again.
  8. Cook the meat until it boils, periodically skimming off the foam.
  9. Reduce the temperature to a minimum.
  10. Cut the peeled carrots in half, add and cook for 15 minutes, remove.
  11. Peel the onion and throw it whole into the broth, add salt and pepper.
  12. Cook at minimum temperature.
  13. Remove the meat and onions.
  14. Strain and pour the finished dish from the pan into a special bowl, garnishing with chopped dill.

If you do not allow a strong boil, the foam will turn into a thin film and sink to the bottom of the dish. After straining, it will completely disappear, but the nutrients will remain in place.

To stir or not

The less you stir the spoon in the broth, the cleaner it will be.

With or without lid

The second option is not only more convenient in terms of controlling the boiling force, but also more rational - water collects under the lid, dripping back into the pan and spoiling the taste.

Golden color

  1. Mix some olive oil with tomato paste. Before placing the chicken bones in the pan, brush them with this mixture and place in the oven (180°C) for 3 minutes.
  2. Peel the top layers of skin from the onion, and leave everything that needs to be removed with a knife. Throw it into the broth at the appointed time - it will acquire a pleasant shade.

We salt wisely

If the goal is tasty boiled meat, add salt “towards the end.” If you need a tasty broth, do it at the beginning, when the water is just starting to boil. Or we don’t add salt at all, relying on the rich combination of flavors of meat, vegetables and spices.

Getting rid of vegetables

The boiled vegetables endowed the broth with their aroma, taste and color - they have nothing else.

Transparency

Strain the broth through a layer of gauze or remove the suspension by flavoring the broth with raw egg white, beaten with a little water. Add, mix - the thickening protein absorbs everything unnecessary.

Broth storage

At + 5°C the broth will last up to five days. For soups and sauces, it is better to use fresh broth.

Chicken broth soup is a classic dish that has been familiar to us since childhood. During the cold season, a fragrant, hot potion will not only satisfy your hunger, but also help you warm up. The dish, at first glance, is very simple, but experienced housewives know special secrets and subtleties. Properly cooked chicken broth is an excellent base for a variety of soups.

Disorders of the body after poisoning

Toxic substances cause serious disruption to human life. After prolonged diarrhea or vomiting, the body loses a lot of fluid. As a result, dehydration may occur. Dehydration is especially dangerous in children, pregnant women and the elderly. The electrolyte balance in the body is disrupted, resulting in loss of calcium and potassium. Because of this, the patient experiences muscle weakness or spasms.

Signs of dehydration include:

  • thirst;
  • rare urination;
  • darkening of urine
  • dry skin;
  • rapid fatigue;
  • inability to sweat.

To prevent dehydration, drink plenty of fluids. Water replenishes fluid reserves, but it is not able to compensate for the loss of microelements, vitamins and salts. Most doctors recommend drinking chicken broth for this.

The healing properties of chicken broth

Chicken broth is indispensable for a patient after poisoning and other diseases, which is why many call it a “magic potion.” It mobilizes the body's energy and has many beneficial properties. What are the benefits of chicken broth?

Chicken broth to replenish water balance and restore strength

The broth is easily digestible and helps replenish the loss of water, microelements and protein. The composition contains minerals in abundance: calcium , magnesium , phosphorus and other elements. All of them have an easily digestible form. It also contains three important amino acids: glycine , proline and arginine :

  1. Glycine cleanses the body well of harmful substances, has calming properties and promotes sound sleep;
  2. Proline prevents cardiovascular diseases, it is especially useful for pregnant women;
  3. Arginine improves immunity.

Chicken cartilage and bones contain large amounts of gelatin, which is an excellent source of protein.

Chicken broth to restore healthy stomach microflora

Low-fat chicken soup is easily digestible, so it relieves intestinal problems and helps restore healthy intestinal microflora, for example after surgery.

Bacteria inside the intestines die from toxins, antibiotics, laxatives, heavy metals, and dysbiosis begins. Unlike living bacteria, dead cells are not able to perform bacterial functions.

As a result, the immune system weakens. May appear: diabetes, obesity, eczema, seborrhea, anemia, internal bleeding, peptic ulcer, stroke, cancer and other diseases. Chicken broth replenishes protein deficiency, restores intestinal acidity, and minimizes harmful effects on the body. After poisoning, not only dehydration occurs, the body is attacked by allergens, viruses and antibodies. Chicken broth is also good for a patient because it improves immunity.

The benefits of chicken broth for children and pregnant women

Children and pregnant women after poisoning should restore their bodies with chicken broth. Light broth has a positive effect on hemoglobin synthesis and increases protein metabolism.

The pregnant body has a greater need for important minerals. The nutrients contained in bone broth help improve kidney and adrenal function. Therefore, the body gets rid of toxins faster, which improves physical and mental well-being. Chicken broth is also very beneficial for the baby in the mother's belly.

In addition, chicken broth has detoxifying activity and helps rid the body of heavy metals. Since toxins usually accumulate in fat mass, it is especially useful for obese people.

Additional broth ingredients that improve its properties

Each ingredient in chicken broth has its own special healing properties. There are a great many recipes for chicken broth. Depending on the ingredients chosen - additional vegetables, herbs and spices, this homemade soup, approved for all types of poisoning, can become even healthier. It usually includes:

  • chicken or chicken meat contains a large amount of acid, which helps expel mucus and toxins from the lungs;
  • carrot. The beta-carotene contained in this vegetable helps strengthen the immune system and fights infection well;
  • Onions contain antioxidants that reduce inflammation and act as an antihistamine.

You can also add bay leaves, onions, and celery to the chicken broth for a sick person. But if you need to prepare a medicinal drink, you cannot include pepper and other spices in its composition.

Prohibitions and dietary options for a sick stomach

The most stringent restrictions in the assortment of first courses are necessary for gastritis with high acidity, erosive and atrophic gastritis. The following are completely prohibited :

  • all seasoning soups. Traditional borscht, sour and fresh cabbage soup, pickles, solyanka seasoned with fried onions and lard are strictly prohibited.
  • Mushroom soups and dishes made from legumes are also prohibited - peas, beans, lentils - they are difficult and take a long time to digest, increase the acidity of the stomach and gas formation in the intestines.

We offer several recipes that are approved for erosive, atrophic and hyperacid gastritis.
